Spring Cocktails Arrive at Heritage Lounge Parramatta — How the Seasonal Shift Changes the Bar Programme
The transition from winter to spring at Heritage Lounge is one of the bar’s most significant annual shifts. The warming, depth-focused cocktails of winter — built around aged spirits, warming botanicals, and the complexity of drinks that suit cold evenings — give way to a programme that makes completely different demands. Light, precisely balanced drinks require more of every element: the freshness of the citrus, the quality of the ice, the exact dilution, the specific amount of effervescence. Spring cocktails are technically more demanding than winter cocktails. The Heritage Lounge team is at its most disciplined when making them.
The Spring Heritage Collection
The spring Heritage Collection programme is led by gin-based preparations and lighter rum expressions. The Anomaly — Roku Gin, peach-infused liqueur, camomile, honey, fresh grapefruit with a hint of lavender — is the bar’s most specifically spring cocktail: delicate, botanical, fragrant. The Withdrawal — Hendrick’s, St. Germain, cucumber syrup, fresh lime, topped with Charles Pelletier Blanc de Blancs — is the pre-dinner Oribu aperitif of the season. The Bankers Vacation — pineapple-infused Stolen White Rum, mango, fresh lemon, pomegranate champagne foam — brings the warmth of spring fruit and the lightness of foam. Currency — Dunalley Rosie & Hip Gin, Princess Sloe Gin, Parfait Amour, fresh lime, muddled blackberries — is the most visually striking spring drink on the menu, and one of the most photographed cocktails in the Heritage Lounge programme.
The Oribu Collection in Spring
The Oribu Collection cocktails are Heritage Lounge’s most directly Japanese-influenced preparations and the most naturally suited to the spring and summer season. The Yuzu Dividend — Cascahuin Blanco Tequila, Chambord, Cointreau, and yuzu juice topped with yuzu champagne foam and fresh berries — is the collection’s spring signature. The Cash Flow — Nikka Coffey Vodka infused with strawberry and cinnamon alongside Nikka Coffey Gin, Lillet Blanc, and yuzu champagne foam — brings the Japanese precision of the Nikka spirits into the lighter spring format. The Highball Holdings — Kurayoshi Pure Malt, Uzenshiraume Umeshu, yuzu juice, orange bitters, and shiso leaf — is the most refined spring highball available in the programme.
Cold Sake — The Spring Recommendation
Spring is when the Heritage Lounge sake list’s Junmai Daiginjo expressions come into their own. Served cold, in a wine glass, at cellar temperature, the Dassai 23 is one of the most compelling and least expected drinks the bar produces: clean, fragrant, delicate, with a fruit and floral profile that reveals itself most fully in a wide-bowled wine glass at eight to ten degrees. The Morishima Omachi Binkan Hiire, with its buttery pear and melon notes, is the alternative for those who prefer more texture at cold service. For groups arriving at Heritage Lounge before an Oribu dinner, a glass of cold Junmai Daiginjo is the bar team’s spring pre-dinner recommendation.
Heritage Lounge opens Monday to Friday from 4pm, weekends from 3pm. Walk-ins welcome.
