Spring Cocktails Parramatta 2026 — Heritage Lounge’s Summer Programme and World Sake Day 1 October
Spring at Heritage Lounge is the cocktail programme’s most technically demanding season, and it is now live. The warming, depth-focused drinks of winter — the Wagyu Wealth, the Furnace, the L.A. Simpson — have given way to the lighter, more precise spring programme. At the same time, the sake list’s most fragrant and delicate expressions have come into their own at cold service, and the most important day on the sake calendar — World Sake Day — is in ten days.
World Sake Day — Thursday 1 October
World Sake Day falls on Thursday 1 October — celebrated annually by sake breweries, bars, and enthusiasts across the world as an occasion to share the tradition of sake with those who have not yet discovered it at its best. At Heritage Lounge, World Sake Day is an opportunity to explore the full sake list with the bar team’s guidance — to move from the accessible Junmai Ginjo expressions through the Junmai Daiginjo collection, and to understand the temperature programme that makes the same sake taste completely different at cold versus warm service.
The bar team is available on 1 October for guided sake introductions, sake flights through contrasting styles, and pairings with the Heritage Lounge bar food programme. For groups who want a structured World Sake Day tasting, contact theheritageprecinct.com.au in advance. For guests who want to arrive and let the bar team guide the evening, walk-ins are welcome from 4pm.
The Spring Heritage Collection
The spring Heritage Collection programme is anchored by gin-based and lighter rum preparations. The Anomaly — Roku Gin, peach-infused liqueur, camomile, honey, fresh grapefruit with a hint of lavender — is the bar’s most specifically spring cocktail. The Withdrawal — Hendrick’s, St. Germain, cucumber syrup, fresh lime, topped with Blanc de Blancs — is the spring aperitif for Oribu diners. The Bankers Vacation — pineapple-infused Stolen White Rum, mango, fresh lemon, pomegranate champagne foam — brings the warmth of spring fruit. Currency — Dunalley Rosie & Hip Gin, Princess Sloe Gin, Parfait Amour, fresh lime, muddled blackberries — is the most visually striking and most photographed cocktail in the spring programme.
The Oribu Collection in Spring
The Oribu Collection — Heritage Lounge’s Japanese-influenced artisanal cocktail programme — reaches its most natural expression in spring. The Yuzu Dividend — Cascahuin Blanco Tequila, Chambord, Cointreau, yuzu juice, yuzu champagne foam, fresh berries — is the collection’s signature spring drink. The Flavour of the Cloud — Morishima Omachi Sake, Oze-No-Yukidoke Wild Grape, Suntory Haku Vodka, Cherry and Raspberry Syrup, topped with an Edible Cherry Cloud — brings the whimsy and delicacy of Japanese cocktail culture into the spring programme. The Highball Holdings — Kurayoshi Pure Malt, Uzenshiraume Umeshu, yuzu juice, orange bitters, shiso leaf — is the most refined spring highball on the menu.
Heritage Lounge opens Monday to Friday from 4pm, weekends from 3pm. Walk-ins welcome. World Sake Day October 1 — arrive from 4pm. Group bookings and enquiries at theheritageprecinct.com.au. Level 1, 215–217 Church Street, Parramatta.
